Curriculum vitae of Professor George Zakynthinos


George Zakynthinos is Professor, at the Department of Public and Community Health of West Attica University of Athens. He worked as professor for nineteen (19) years at the Department of Food Science and Technology, of Peloponnese University and he was for ten (10) years Chairman of the referred Department. He established a Lab on Nutraceuticals and he had the heading and the supervision of the Lab for five (5) years.
His studies include graduate Postgraduate specialized courses in Greek and International Institutions and Universities as a scholarship holder in different topics such as Biotechnology and its Agricultural Applications, Molecular Techniques in plant Genetic Improvement and in Biology, the food technology. He holds a Ph.D. from the Department of Agricultural Biotechnology of the Agricultural University of Athens and has completed two postdoctoral research projects (2001-2002 and 2009-2010) the first on Plant Biochemistry & Physiology and the second one in Plant Improvement aiming to nutraceutical production.
His research subjects are: biology and technology of fruit and vegetables, the development nutraceuticals products based on natural products and its phytochemicals, the safety and the development health protective products complete his research interests.
He was teaching and he is teaching various lessons such as Food Technology, Food Safety, New products Development and Human Nutrition. He holds several patents on nutraceuticals and functional foods. He was carried out involved in several research projects by the position of international coordinator, national coordinator, member of the international research team and as a coordinator of R&D Department of private sector nutraceuticals companies. The published works are contributed to international journals in conference proceedings and as journal articles in collective volumes or books.
